- 1 lit of fresh milk without sugar (I usually use whole milk).
- 1/3 can of condensed milk has sugar.
- 150ml whipping (the amount of whipping can increase or decrease according to the viscosity / fatness).
- 1tbsp green tea powder (if making white yogurt, skip).
- 1 box (100 grams) of white yogurt (yeast).
- Machine incubation:
For those who are incubated by machine, fresh milk, whipping from the refrigerator can also be done, or left at room temperature is also ok no problem. If the milk is cold, the incubation time is longer only.
Take about 50ml of fresh milk, turn it warm, add green tea powder, stir well (if making white yogurt, skip this step). Just stir the fresh milk, fresh milk, whipping evenly. Use a small spoon to puree the yogurt box and pour it into the fresh milk mixture, stir, gently. Pour the milk mixture into a cup / box to incubate, plug in the power (depending on the type of machine and the ingredient is more or less cold) but the incubation time varies slightly. Usually, we incubate it overnight, about 10 ~ 12 o’clock is fine.
2. Conventional incubation:
Warm mixture of fresh milk, longevity milk, whipping to about 40C. Add green tea powder to stir until dissolved (can be filtered through the sieve to remove the tea clump)
Stir in yogurt cans (yeast). Add in warm milk mixture, stir well.
Pour into small cups / boxes.
You can turn on the oven for about 5-7 minutes. Turn off the oven. Put the milk tray in for overnight. Or put a pot of hot water in the oven to incubate. Even in hot weather, you can carry a tray of milk (with a lid) and bring it out in the sun, dry for a few hours to ferment the milk.
Finished product requirement
Milk is smooth, flexible, thick, and has a moderate sour taste.
